I love spicy food, and for a few days I have been craving for some badly. So I decided to make some hot chilli sauce, the Sambal Oelek
“Sambal” is an Indonesian word that refers to any chili sauce or paste that is made from a variety of chili peppers , with any other ingredients added in for flavor.
The key to all spicy food are the condiments & spices you use to prepare your base. Indonesians love their Sambal and add it to almost every dish. It gives a tangy and spicy flavour to the dish. I added a handful of garlic cloves to it for a more dense flavour.
2 handfuls of dried red chillies
1.5 handful of garlic cloves
1 handful green chillies
1/2 cup vinegar
3/4 tsp salt
1/2 tsp sugar
Blend everything together really well. You can add 2tbsp-4tsp water.
Cook the chilli sauce on the stove for 5mins in medium high flame and let it simmer for a minute or two. You don’t want to overcook it or else it will lose its color. Cool it down and store it in an airtight jar in the refrigerator.
Have it with some dumplings or add it to your nasi goreng or mi goreng. See Less—
